Main Ingredients- 500g Blanched Fernbrake
- 2 Tbsp Perilla Powder
- 1/2 Tbsp Rice Flour
- 3/4 cup Kelp Broth (approx. 150ml)
- 1 Tbsp Perilla Oil
- A pinch of Sesame Seeds
Seasoning- 3 Tbsp Soup Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 3 Tbsp Soup Soy Sauce

Cooking Instructions
Step 1
First, prepare the blanched fernbrake that has been cleaned and trimmed. Cut it into bite-sized pieces, about 5-7cm long, so it’s easy to eat and absorbs seasoning well. Place the cut fernbrake in a bowl and mix with the seasoning ingredients: 3 Tbsp soup soy sauce, 1 Tbsp minced garlic, and 1 Tbsp sesame oil. Gently massage it in and let it marinate for about 10 minutes. This pre-seasoning adds a savory depth to the fernbrake, making it even more delicious.
Step 2
Heat a pan over medium-low heat and add 1 Tbsp of perilla oil. Add the marinated fernbrake and stir-fry for about 3-4 minutes until it becomes fluffy and tender, being careful not to burn it. It’s important to cook the fernbrake until it’s slightly softened.
Step 3
Once the fernbrake is somewhat sautéed, add chopped green onions (optional), 2 Tbsp perilla powder, 1/2 Tbsp rice flour, and 3/4 cup (approx. 150ml) of kelp broth. The rice flour helps to make the dish smooth and bind the seasoning. Add all ingredients and continue to stir-fry over medium-low heat for another 3-5 minutes, until the ingredients are well combined and the liquid has reduced to a light glaze. Stir occasionally to prevent sticking.
Step 4
Finally, just before turning off the heat, sprinkle with sesame seeds for an extra nutty aroma and appealing finish. Your delicious stir-fried fernbrake with perilla leaves is now complete! It’s absolutely wonderful served with warm rice.
