Ingredients- 250g Seoritae beans (black soybeans)
- 5 Tbsp soy sauce
- 3 Tbsp honey
- 3 tsp sugar
- 600cc water
- 1/2 tsp sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Begin by preparing the Seoritae beans. Rinse 250g of Seoritae beans thoroughly under cold water. Place them in a bowl and soak them in 500cc of water for 5 hours. This soaking process is crucial for softening the beans, ensuring they cook evenly and have a tender texture.
Step 2
Once soaked, transfer the beans to a pot. Add the remaining 100cc of water and 5 tablespoons of soy sauce. Cover the pot with a lid and bring to a boil over high heat for 3 minutes. This initial boiling helps the beans absorb the savory flavor of the soy sauce.
Step 3
Reduce the heat to medium and let the mixture simmer, uncovered, until most of the liquid has evaporated and the sauce has thickened. This should take about 16 minutes. Taste the beans to ensure they are tender but still have a slight bite. Avoid overcooking them until mushy.
Step 4
When the sauce has reduced significantly, add 3 tablespoons of honey and 3 teaspoons of sugar. Continue to cook for another 2-3 minutes, stirring gently. The honey and sugar will caramelize slightly, giving the beans a beautiful glaze and enhancing their sweetness. Be careful not to let them burn.
Step 5
Finally, remove the pot from the heat. Drizzle in 1/2 teaspoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Stir gently to combine. Your delicious and nutty Seoritae Bean Jorim is now ready to be served and enjoyed!
