Spicy & Sweet Jeyuk Marinade

  • Gochujang (Korean chili paste), 4 Tbsp
  • Gochugaru (Korean chili flakes), 2 Tbsp
  • Soy sauce, 2 Tbsp
  • Sugar, 2.5 Tbsp (adjust to taste)
  • Sesame oil, 2 Tbsp
  • Mirin (rice wine), 4 Tbsp
  • Black pepper, a pinch
  • Oligodang (corn syrup) or Mulyeot (corn syrup), 1 Tbsp (for shine and sweetness)
  • Minced ginger, 1 tsp

Cooking Instructions

Let’s start by making the delicious Jeyuk marinade! In a large bowl, combine gochujang (4 Tbsp), gochugaru (2 Tbsp), soy sauce (2 Tbsp), sugar (2.5 Tbsp), sesame oil (2 Tbsp), and mirin (4 Tbsp). Add a pinch of black pepper, oligodang (or mulyeot) for shine and sweetness (1 Tbsp), and minced ginger (1 tsp) for freshness. Mix everything thoroughly until well combined.

For this Jeyuk Deopbap, we’re using pork hind leg, but pork shoulder (aprik-sal) works well too. Pork slices, especially when thin, tend to clump together. To ensure the marinade penetrates evenly, gently separate each slice before adding it to the marinade bowl. Then, use your hands to gently knead and mix the pork with the marinade until each piece is well coated. Let it marinate for optimal flavor.

Now, let’s prepare the vegetables. Peel and wash the onion, then thinly slice it into strips about 0.5cm thick. Wash the scallions and cut them into roughly 5cm lengths, focusing on the white and light green parts for a good aroma and texture.

Heat a wok or a deep pan over medium heat. Add 1-2 Tbsp of cooking oil. Once the pan is warm, add the sliced onions and chopped scallions. Stir-fry until the vegetables soften slightly and become translucent, releasing their natural sweetness and aroma.

Once the vegetables are lightly sautéed, add the marinated pork to the pan. Use chopsticks or a spatula to break apart the pork pieces and stir-fry them quickly so they don’t clump together. If you prefer a spicier kick, you can add an extra tablespoon of gochugaru at this stage and stir-fry it in. (If serving to children, it’s best to omit this extra gochugaru.)
