It’s summer, and while refreshing cold dishes are great, sometimes a warm, hearty soup is just what you need! Embracing the philosophy of ‘fighting heat with heat,’ why not try this Seaweed and Dried Pollack Soup? It’s a delightful combination of the ocean’s freshness and the savory depth of dried pollack, perfect for a light meal or a comforting remedy.
Main Ingredients- 150g Seaweed (Maesaengi)
- 50g Dried Pollack (Hwangtae)
- 4 cups (800ml) Water
Cooking Instructions
Step 1
First, place the dried pollack in a bowl and soak it in water for about 10 minutes until it becomes soft and pliable. Be careful not to soak it for too long, as this can diminish its flavor. Gently squeeze out excess water before setting aside.
Step 2
Rinse the seaweed gently in cold water about twice to remove any impurities. Loosen any clumps with your fingers and drain it well in a sieve. Avoid rinsing too vigorously, as this can wash away the delicate aroma of the seaweed.
Step 3
In a deep pot, add the prepared seaweed. Use scissors to cut it into 2-3 manageable pieces. Then, add the squeezed dried pollack (50g) and perilla oil (1 Tbsp). Sauté over medium-low heat for about 2-3 minutes until fragrant. This step enhances the nutty flavor of the pollack and deepens the overall taste of the soup.
Step 4
Pour 2 cups (400ml) of water into the pot where you sautéed the pollack. Bring it to a boil over medium heat. Once boiling, skim off any foam or impurities that rise to the surface to ensure a clear and clean broth.
Step 5
Add the remaining 2 cups (400ml) of water to the pot. Now, add the soaked seaweed (150g) and minced garlic (1 tsp). Continue to cook until the soup returns to a boil. Avoid boiling the seaweed for too long after adding it, as this can affect its tender texture.
Step 6
Finally, stir in the fish sauce (2 Tbsp) to season the soup. You can substitute this with soy sauce or anchovy sauce if preferred. Taste and adjust the seasoning with a pinch of salt if needed. Drizzle in sesame oil (1 Tbsp) and add a pinch of black pepper. Your delicious and nutritious Seaweed and Dried Pollack Soup is now ready! Enjoy it warm.
