Ingredients- 10g Dried seaweed strips
- 10 Unsalted crackers
- 5 Shine Muscat grapes
- A little bit of microgreens (like radish sprouts)
- 1/2 Tbsp Whole grain mustard
- 1 Pinch of salt
- A little Sriracha sauce
- 1-2 Lettuce or chicory leaves
Cooking Instructions
Step 1
First, prepare the star ingredient: the dried seaweed strips. If you don’t have pre-cut dried seaweed strips, you can soak regular dried seaweed in water and then chop it finely.
Step 2
Lightly soak the dried seaweed in cold water. Be careful not to soak it for too long, as it can become too soft and mushy.
Step 3
Rinse the soaked seaweed thoroughly under running cold water to remove any impurities. It’s crucial to remove as much moisture as possible; gently press it with paper towels to absorb excess water. In a bowl, combine the whole grain mustard and a pinch of salt. Add the drained seaweed and gently mix it with your hands until well combined. The key to a great texture and flavor is to ensure the seaweed is relatively dry after mixing!
Step 4
Prepare the unsalted crackers, which will serve as the crispy base for your canapés. You can use various types of crackers, but plain unsalted ones allow the flavors of the other ingredients to shine.
Step 5
Place a fresh leafy green on top of each cracker. Today, we’re using lettuce, but crisp chicory or baby greens would also be delicious. If you enjoy cheese, consider adding a thin slice of cheese on the cracker before the greens.
Step 6
Now, carefully arrange the seasoned seaweed mixture on top of the leafy greens. The chewy texture of the seaweed combined with the zesty notes of the whole grain mustard creates a delightful harmony.
Step 7
Decorate with halves of sweet and crisp Shine Muscat grapes. Seedless grapes are easy to eat, and their refreshing tartness helps cut through any richness. For a more colorful presentation, consider adding halved cherry tomatoes.
Step 8
Finally, add a tiny drizzle of Sriracha sauce for a special touch of flavor. Think of it like a sweet and spicy dipping sauce for skewers; the mild heat from the Sriracha enhances the sweetness of the grapes and the savory notes of the seaweed. Be mindful not to add too much, as it can be spicy – just a small amount for a flavor accent is perfect!
