Crispy and Refreshing Seasoned Pickled Radish
This is a delightful dish made from pickled radish, originally preserved in soy sauce during winter. It’s perfect for when your appetite wanes during the summer heat. Simply toss it with a flavorful sauce for a quick and tasty side.
Main Ingredients- Soy-pickled radish, 1/2 (approx. 300g)
Seasoning- Scallion (green part), 1 stalk
- Minced garlic, 1 Tbsp
- Sugar, 1 Tbsp
- Sesame seeds, 1 Tbsp
- Oligosaccharide (or corn syrup), 1 Tbsp
- Sesame oil, 1 Tbsp

Cooking Instructions
Step 1
Take out half of the soy-pickled radish that was preserved in soy sauce. If you don’t have homemade pickled radish, you can use store-bought ones as well.
Step 2
First, cut the pickled radish lengthwise into four pieces. Then, slice it thinly, about 0.5 cm thick. Avoid slicing too thinly, as it might affect the crispiness. Aim for a satisfying thickness.
Step 3
Place the sliced pickled radish in cold water and soak for about 5 to 10 minutes. This step helps to rinse away any excess saltiness and impurities, ensuring a balanced flavor.
Step 4
Carefully remove the pickled radish from the cold water and place it in a cheesecloth or fine mesh bag. Squeeze out as much water as possible by hand. Removing excess moisture is crucial for the seasoning to adhere well and create a delicious dish.
Step 5
Transfer the squeezed pickled radish to a mixing bowl. Add the finely chopped scallions, 1 Tbsp minced garlic, 1 Tbsp sugar, and 1 Tbsp sesame seeds. Gently toss and mix with your hands until all the ingredients are evenly distributed.
Step 6
Add 1 Tbsp of oligosaccharide (or corn syrup) for a touch of sweetness and gloss. Gently mix again to combine.
Step 7
Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma and give it a final gentle mix. This completes your delicious seasoned pickled radish. Adding sesame oil at the end preserves its fragrant flavor.
Step 8
