I picked some kodul-pppaegi from my mother’s small garden and made a tangy and sweet seasoned salad. It’s a healthy side dish with a pleasant bitterness, balanced by a sweet and sour flavor! ^^

Main Ingredients

  • Kodul-pppaegi (Korean Chiffon Lettuce) 800g
  • Green Onion 1/2 stalk (finely chopped)

Seasoning

  • Gochujang (Korean chili paste) 2 Tbsp
  • Oligosaccharide 2 Tbsp (adjust sweetness to taste)
  • Minced Garlic 1/2 Tbsp
  • Sugar 1/2 Tbsp
  • Apple Cider Vinegar 2 Tbsp (adjust sourness to taste)
  • Sesame Oil a little
  • Toasted Sesame Seeds a little

Cooking Instructions

Step 1

Carefully select fresh kodul-pppaegi, as if just picked from your mother’s garden. First, remove any yellowing outer leaves and trim any dirty roots. Then, gently rinse the kodul-pppaegi under running water to remove any debris.

Fill a pot with plenty of water and bring it to a boil. Once the water is vigorously boiling, add 1 Tbsp of salt. (Important Note: Do not add salt to cold water. Adding salt only after the water has reached a rolling boil ensures the kodul-pppaegi is blanched properly.)

Add the cleaned and trimmed kodul-pppaegi to the boiling water and blanch for just 30 seconds. It’s crucial to blanch for a short time to maintain the crisp texture of the kodul-pppaegi. Remove it immediately after 30 seconds.

Immediately rinse the blanched kodul-pppaegi in cold water about 3 times to cool it down and remove any lingering bitterness. After rinsing, squeeze out as much water as possible by hand. If the roots are thick, cut them in half lengthwise. Then, chop the kodul-pppaegi into bite-sized pieces (about 3-4 cm long).

Place the squeezed kodul-pppaegi into a mixing bowl. Add all the prepared seasoning ingredients: the finely chopped green onion, minced garlic, apple cider vinegar, toasted sesame seeds, oligosaccharide, sugar, and gochujang. Gently mix and toss everything together with your hands until the seasoning is evenly distributed throughout the kodul-pppaegi.

If you enjoy the slightly bitter taste of kodul-pppaegi, you can skip the step of soaking to remove bitterness and season it directly after blanching. If you find the bitterness too strong, you can soak it in water for a while to mellow the flavor before seasoning.
