Spring Greens Delight: Deodeok Leaves Seasoned with Doenjang!
Try this savory and deeply flavorful doenjang (fermented soybean paste) seasoned deodeok (or Ulleungdo miyeokchwi) salad. It’s a healthy and invigorating side dish perfect for the spring season.
Ingredients- Deodeok leaves (or miyeokchwi) 300g
- White part of green onion, a little
Seasoning- Salt 1 tsp (for blanching)
- Doenjang (fermented soybean paste) 1 Tbsp, heaped (traditional or store-bought)
- Minced garlic 1 tsp
- Toasted sesame seeds 1 Tbsp (ground)
- Sesame oil 1 Tbsp
- Salt 1 tsp (for blanching)

Cooking Instructions
Step 1
Begin by preparing the deodeok leaves. Trim off any tough stems and discard any yellowed or bruised leaves. This ensures a pleasant texture and fresh taste in your finished dish.
Step 2
Finely chop the white parts of the green onion. This will help distribute the flavor evenly throughout the salad.
Step 3
Bring a pot of water to a rolling boil and add 1 tsp of salt. Add the prepared deodeok leaves and blanch for a very short time, about 30 to 40 seconds. Be careful not to overcook, as they can become too soft. Immediately transfer the blanched leaves to cold water and rinse 2-3 times to cool them down. Gently swish them in the cold water, then gently squeeze out as much excess water as possible.
Step 4
In a bowl with the squeezed deodeok leaves, add all the prepared seasoning ingredients. This includes 1 Tbsp of doenjang, 1 tsp of minced garlic, and the finely chopped white parts of the green onion.
Step 5
Now, it’s time to mix everything together. To ensure the doenjang and seasonings are well incorporated, gently but firmly massage the leaves as you mix. This technique helps the flavors meld beautifully. Taste the salad and if it needs more saltiness, add a tiny pinch of salt at a time until it’s just right.
