Seafood Tomato Pasta from Your Fridge
Whip up a Delicious Seafood Tomato Pasta Using Ingredients from Your Fridge
It’s the weekend, and you’ve slept in! Craving some spaghetti for a late brunch? Today, we’re clearing out the fridge to make a fantastic Seafood Tomato Pasta. (Measurements are based on adult-sized Korean soup spoons.)
Main Ingredients- Spaghetti noodles, 1 serving
- Squid, 1/3 to 1/2
- Frozen shrimp, 5
- Onion, 1/2
- Minced garlic, 1 Tbsp
- Store-bought tomato sauce, 5 Tbsp
- Salt, to taste
- Cooking wine (Mirin), 3 Tbsp
- Whole peppercorns, 1 tsp
Cooking Instructions
Step 1
First, check your refrigerator for any other vegetables or seafood you might have besides the listed ingredients. Feel free to add them to make your pasta even more special. Fresh ingredients will always be a great addition.
Step 2
Rinse the squid and frozen shrimp thoroughly. Cut the squid body in half and then into approximately 2cm thick pieces. Marinate the prepared seafood with 3 Tbsp of cooking wine and 1 tsp of whole peppercorns. This step helps to remove any fishy odors and adds a nice flavor.
Step 3
Dice the onion into approximately 0.5cm to 0.7cm cubes. Avoid chopping them too finely, as they can become mushy when sautéed.
Step 4
Mince the garlic. You can also start with pre-minced garlic for convenience.
Step 5
Begin by boiling water for the pasta. Fill a large pot with plenty of water and bring it to a boil over high heat.
Step 6
While the pasta water is heating, heat a pan over medium heat with a generous amount of olive oil. Add the minced garlic and sauté until fragrant and lightly golden. Once the garlic is fragrant, add the diced onion and sauté until the onions are translucent and begin to turn lightly golden brown.
Step 7
When the onions are nicely sautéed and sweet, add the prepared seafood (squid and shrimp) to the pan. Increase the heat to medium-high and stir-fry quickly. Be careful not to overcook the seafood, as it can become tough. Cook just until the seafood turns opaque.
Step 8
Once the seafood is mostly cooked, add about 5 generous tablespoons of your store-bought tomato sauce. If the sauce seems too thick, add a splash of water to reach your desired consistency and bring to a simmer. Sautéing the seafood before adding the sauce allows the flavors to meld beautifully.
Step 9
Once the water is boiling, add about 1 teaspoon of salt to the pasta water. Add the spaghetti noodles and cook for about 5-6 minutes, or 1-2 minutes less than the package instructions for al dente. Reserve about one ladleful of the pasta cooking water before draining.
Step 10
Drain the cooked pasta and add it directly to the pan with the seafood and tomato sauce. Add the reserved pasta water and toss everything together thoroughly to coat the noodles evenly with the sauce. The pasta water helps to emulsify the sauce and create a silky texture.
Step 11
Taste the pasta and adjust the seasoning as needed. If it’s not salty enough, add a little more tomato sauce or a pinch of salt. You can also add a grind of black pepper if desired.
Step 12
Using a good quality store-bought sauce means you can achieve delicious results with just simple additions like onions and garlic. Even if you don’t have the specific seafood listed, feel free to use whatever you have on hand. As long as you don’t skimp on the sauce, you can easily create a tomato pasta that rivals those from a restaurant. Enjoy your homemade pasta!
