First, carefully clean and wash the spinach multiple times to remove any dirt or debris. Drain the water thoroughly and chop it into pieces about 1cm in size. Finely julienne the carrot. (You can also add onions or other vegetables like zucchini if you prefer.) If using frozen seafood, rinse it lightly under running water. If you are concerned about a fishy odor from the seafood, soak it briefly in soju or cooking wine, then drain and cut into bite-sized pieces.

In a large bowl, combine the chopped spinach, julienned carrot, prepared seafood, and sliced almonds. Add 1 cup of pancake mix and 0.8 cup of cold water. Mix well to create a batter, ensuring there are no lumps. The amount of water can be adjusted based on the type of pancake mix and humidity; aim for a slightly thick consistency. If using regular flour, add a pinch of salt and minced garlic for seasoning.

Crack 1 egg into the batter. Lightly whisk the egg and mix it thoroughly into the batter until everything is evenly combined. The egg helps to soften the pancake’s texture and binds the ingredients together.

Finally, stir in 2 tablespoons of sliced almonds for a nutty flavor. You can use chopped nuts or omit them if preferred. The almonds add a delightful crunch and nutty aroma to the finished pancake.
