Main Ingredients- 2.5 cups Tteokbokki rice cakes (approx. 400g)
- 8 peeled shrimp
- 1 cleaned squid
- 1/2 onion, thinly sliced
- 1 green onion, cut diagonally
- 4 shiitake mushrooms, thinly sliced
- 2 heads of bok choy, ends trimmed
- Cooking oil, for stir-frying
- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Seafood Soy Sauce Base- 2 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or other liquid sweetener)
- 1/2 Tbsp minced garlic
- 3 Tbsp cooking wine (like mirin)
- 9 Tbsp water
- 6 dried chili peppers (peperoncino), crushed (adjust for spice)
- Pinch of black pepper

- 1 Tbsp corn syrup (or other liquid sweetener)
- 1 Tbsp sesame oil

- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
Prepare all your ingredients for a delicious Seafood Soy Sauce Tteokbokki. Wash and chop the vegetables, and prepare the seafood for cooking.

If using firm tteokbokki rice cakes, rinse them under cold water and then blanch them in boiling water for about 2 minutes. This will soften them, allowing the sauce to penetrate better and improve the texture. (Skip this step if you’re using soft, fresh rice cakes.)
Step 3
Drain the blanched rice cakes thoroughly. Excess water can dilute the sauce. Place the drained rice cakes in a bowl and add the ‘Rice Cake Seasoning’ ingredients (1 Tbsp soy sauce, 1 Tbsp corn syrup, 1 Tbsp sesame oil). Gently mix and massage the ingredients into the rice cakes. This pre-seasoning adds a subtle savory depth.
Step 4
Now, let’s make the rich Seafood Soy Sauce base. In a small bowl, combine all the ‘Seafood Soy Sauce Base’ ingredients: 2 Tbsp soy sauce, 2 Tbsp oyster sauce, 1 Tbsp sugar, 1 Tbsp corn syrup, 1/2 Tbsp minced garlic, 3 Tbsp cooking wine, 9 Tbsp water, 6 crushed dried chili peppers, and a pinch of black pepper. Stir well until the sugar is dissolved. Tip: Taste the sauce and adjust the seasoning to your preference. You can add more soy sauce for saltiness, sugar or corn syrup for sweetness, or a little water to adjust the consistency.
Step 5
Heat a large pan over medium heat and add a little cooking oil. Add the sliced onions and stir-fry for 2-3 minutes until they become fragrant and slightly softened. Sautéing the onions well will enhance their sweetness and flavor.
Step 6
Add the pre-seasoned rice cakes, shrimp, and squid to the pan. Continue to stir-fry over medium heat until the shrimp are fully cooked and turn pink. Tip: Cook the shrimp until they are opaque and pink. Squid cooks very quickly, so you can either cook it briefly here or add it in the next step to prevent it from becoming tough.
Step 7
Add the sliced shiitake mushrooms and green onions. Pour in the prepared Seafood Soy Sauce. Stir everything together over medium heat for 1-2 minutes, allowing the sauce to coat the ingredients and meld the flavors.

Finally, add the bok choy. Stir-fry for another 30 seconds to 1 minute over medium heat, just until the bok choy wilts slightly. It’s important not to overcook the bok choy, as it should retain some of its crispness.
