Inspired by Park Sol-mi’s sea purslane pancake recipe from the TV show ‘Stars’ Alley’, I decided to try making it at home! For those who find making pancakes a bit daunting, this sea purslane pancake is the perfect entry-level dish. The sea purslane itself is naturally savory, meaning you barely need any extra seasoning, making it an incredibly simple yet delicious pancake. The crispy texture achieved with tempura powder and water is truly wonderful.
Ingredients- 200g Sea purslane
- 100g Tempura flour
- 200g Water
- 1 Red chili pepper
- Olive oil, for cooking
Cooking Instructions
Step 1
First, prepare the sea purslane. Wash it thoroughly under running water to remove any dirt or debris. Gently shake off excess water and set aside.
Step 2
Now, let’s make the batter for the pancake. In a bowl, combine 100g of tempura flour (about 1 cup) and 200g of water (about 1 cup). Whisk or stir with chopsticks until it forms a very thin, smooth batter. It’s crucial to have a watery consistency so the batter coats the sea purslane well.
Step 3
Add the prepared sea purslane to the tempura batter. Gently toss it to coat the sea purslane evenly with the batter, being careful not to break the delicate leaves.
Step 4
Heat a frying pan over medium-high heat and add a generous amount of olive oil. Once the oil is hot, carefully pour the batter-coated sea purslane onto the pan, forming a thick layer. As it cooks, gently press down on the pancake with a spatula or turner to ensure it becomes extra crispy.
Step 5
Cook on medium-low heat until one side is golden brown. Then, carefully flip the pancake and cook the other side until it’s also evenly golden and crispy.
