  • 3 ripe tomatoes

Cooking Instructions

Step 1

Crack 3 eggs into a bowl. Add a pinch of salt and whisk gently with a fork until the yolks and whites are just combined. Avoid over-whisking for a tender texture.

Heat 1/2 Tbsp of olive oil in a non-stick pan over medium heat. Pour in the whisked egg mixture, tilting the pan to create a thin layer.

As the eggs begin to set around the edges, gently stir them with chopsticks or a spatula to create soft curds, like scrambled eggs. Cooking over medium-low heat will ensure a tender result.
