Easy Scallop Soup Recipe: Refreshing and Flavorful
Hello everyone, this is Gurumdalbit! Today, I’ll share how to make a delicious scallop soup. When making soups like this, using live, fresh seafood will yield the most refreshing flavor. Scallop soup isn’t difficult to make, and when you have a bowl, the clear broth is incredibly soothing and revitalizing. After indulging in rich foods during the Chuseok holiday, I was feeling a bit heavy, so a clear and spicy scallop soup was exactly what I needed. Try this revitalizing soup to cleanse your palate!
Main Ingredients- 40 fresh scallops
- 1 Tbsp minced garlic
- 2 Cheongyang peppers (Korean chili peppers)
- A small amount of green onion (for garnish)
- 4 slices of radish
- A pinch of salt (to taste)
Cooking Instructions
Step 1
First, prepare the aromatics that will add depth to the soup. Place the minced garlic and the two Cheongyang peppers (whole or roughly chopped) into a spice bag or a piece of cheesecloth. This makes them easy to remove later.
Step 2
This step builds the foundation for a refreshing broth. In a pot, combine the sliced radish, the green onion cut into large pieces, and the spice bag containing garlic and peppers. Add about 1000ml (approximately 5 cups) of water and bring to a boil over high heat to create the broth.
Step 3
Thoroughly cleaning the scallops is crucial. If using live, fresh scallops, soak them in cold water to purge any sand. Then, under running water, use a brush or a clean scrubbing brush to meticulously scrub away any mud or impurities clinging to the shells. Be gentle to avoid damaging the shells.
Step 4
Now, it’s time to cook the scallops. In a deep pot, arrange the cleaned scallops neatly. Add the prepared spice bag as well. Cover the pot and bring to a boil over high heat. Once it starts boiling, the broth from the scallops might cause it to overflow, so remove the lid. Reduce the heat to medium and cook until the scallops open their shells. Be careful not to overcook, as this can make the scallops tough.
Step 5
Finally, season and finish the soup. Once all the scallops have opened and are cooked, add a pinch of salt to taste according to your preference. Garnish with the roughly chopped green onions. Turn off the heat, and your refreshing and spicy scallop soup is ready! It’s best enjoyed hot.
