A delightful collaboration of blanched scallion rolls and vibrant flying fish roe.
Ingredients- 1/3 bunch Scallions (approx. 100g)
- 30g Flying Fish Roe
Seasoning- 2 Tbsp Chojang (Korean spicy-sweet vinegar-based sauce)
- 2 Tbsp Chojang (Korean spicy-sweet vinegar-based sauce)
Cooking Instructions
Step 1
Prepare the fresh scallions. First, trim the root ends of the scallions and wash them thoroughly under running water to remove any dirt or debris. Now, get ready to blanch the scallions, starting from the leafy top towards the root end.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Once the water is boiling vigorously, carefully add the scallions and blanch them for about 2 minutes. It’s important to keep the scallions slightly crisp, so be mindful not to overcook them.
Step 3
Immediately transfer the blanched scallions to cold water to stop the cooking process and cool them down. Gently squeeze out as much water as possible. A helpful tip is to shape the scallions into a donut-like circle while draining; this helps remove excess water trapped within the layers, preventing the dish from becoming watery.
Step 4
Once the water is squeezed out, gather the scallions, bringing the bottom parts together towards the root end to create a neat bundle. Starting from the leafy top, gently roll the scallions around themselves. Then, using a chopstick, carefully tuck one end of the rolled scallion into any available gap within the bundle to secure the shape. This technique creates an aesthetically pleasing and easy-to-handle appetizer.
Step 5
Generously top the prepared scallion rolls with fresh flying fish roe, and drizzle with sweet and tangy Chojang. The popping texture of the fish roe combined with the spicy-sweet Chojang perfectly complements the subtle sweetness of the scallions, creating a fantastic appetizer or drinking snack. You can also sprinkle some sesame seeds on top for added flavor, if desired.
