Cooking Instructions
Step 1

Carefully submerge the thoroughly washed scallions, starting with the white parts, into the boiling water. Ensure the entire bunch is submerged, and blanch for approximately 7 seconds only. Be careful not to over-blanch, as they can become mushy.

Immediately remove the blanched scallions from the hot water and rinse them under cold running water to stop the cooking process. This step is crucial for maintaining their crisp texture and vibrant green color. Drain them well in a colander, allowing all excess water to drip off.
