Main Ingredients- 300g Chicken Breast
- 1 Scallion (Green Onion)
- 1/2 Ginger (thumb-sized piece)
- 1 Tbsp Soy Sauce
- 3 Tbsp Cooking Oil
- Pinch of Salt
Scallion & Ginger Dressing- Scallion for salad: 1/2 white part of the scallion
- Ginger for salad: 1/2 piece of ginger (thinly julienned)
- Aromatic Oil: 3 Tbsp Cooking Oil
- Seasoning: 1 Tbsp Soy Sauce, Pinch of Salt (to taste)
- Scallion for salad: 1/2 white part of the scallion
- Ginger for salad: 1/2 piece of ginger (thinly julienned)
- Aromatic Oil: 3 Tbsp Cooking Oil
- Seasoning: 1 Tbsp Soy Sauce, Pinch of Salt (to taste)
Cooking Instructions
Step 1
First, prepare the scallions and ginger. Slice half of the scallion thickly for boiling with the chicken breast. Finely julienne the other half for the salad and soak it in cold water to make it crisp.
Step 2
Prepare the ginger similarly. Slice about 3-4 larger pieces for boiling with the chicken breast, and thinly julienne the remaining ginger for the salad. Soak the julienned ginger with the julienned scallions in cold water.
Step 3
Now, let’s boil the chicken breast. Fill a pot with enough water to cover the chicken breast. Add the thickly sliced scallions and ginger prepared earlier. Once the water boils, add the chicken breast and simmer for about 15-20 minutes until fully cooked. Remove the chicken breast, let it cool slightly, and then shred it into bite-sized pieces by hand along the grain.
Step 4
Let’s make the dressing. Place the thinly julienned scallions and ginger into a bowl. Heat 3 tablespoons of cooking oil in a pan over medium heat for about 30 seconds until hot. Pour this hot oil over the scallions and ginger in the bowl (this will release a richer aroma!). Finally, add 1 tablespoon of soy sauce and a pinch of salt to your taste, then mix well. Combine the dressing with the shredded chicken breast and mix thoroughly. Your delicious Scallion Ginger Chicken Breast Salad is ready! It’s also delicious served over rice as a simple rice bowl.
