Main Ingredients- 1 packet of instant ramen
- 1/2 white part of a large green onion
- 2 fresh eggs

Cooking Instructions
Step 1
Thoroughly wash the white part of the green onion and pat it dry. Slice it thinly into long julienne strips. These crispy scallions will add a wonderful texture and fresh flavor to your ramen.

Crack 2 fresh eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them gently until just combined. You want a smooth, lightly beaten egg mixture.

In a pot, add a little more water than you would typically use for one packet of ramen (about 1.5 times the usual amount). Bring to a boil, then add the ramen seasoning packet and the noodles. Cook the noodles until they are ‘al dente’ or slightly firm to the bite – this is key to the recipe’s texture.

Just as the noodles reach the desired ‘al dente’ stage, get ready to add the beaten eggs and sliced scallions. Don’t overcook the noodles at this point.
