Scallion and Gim Salad
This recipe uses fresh scallions from the garden and transforms leftover dried seaweed (gim) into a delightful and quick side dish. The fragrant scallions, paired with the savory and nutty flavor of gim, create a rich umami taste that’s incredibly addictive. It’s a perfect way to add a burst of freshness and flavor to any meal.
Main Ingredients- 300g Fresh Scallions
- 10 sheets Dried Gim (Korean Seaweed)
- 1/3 Carrot, julienned
- 1 tsp Coarse Sea Salt (or Kosher salt)
Seasoning- 1 Tbsp Fish Sauce (Anchovy or Sand Lance)
- 1 Tbsp Plum Extract (or syrup)
- 1 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Oil
- 1 Tbsp Toasted Sesame Seeds, crushed
- A pinch of Toasted Sesame Seeds, for garnish
- 1 Tbsp Fish Sauce (Anchovy or Sand Lance)
- 1 Tbsp Plum Extract (or syrup)
- 1 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Oil
- 1 Tbsp Toasted Sesame Seeds, crushed
- A pinch of Toasted Sesame Seeds, for garnish
Cooking Instructions
Step 1
Prepare the scallions by trimming off any wilted or dirty ends. Wash them thoroughly 3-4 times under cold running water to remove any grit. Shake off excess water, then cut them into approximately 5cm lengths.
Step 2
Bring a pot of water to a rolling boil and add 1 tsp of coarse sea salt. Carefully add the scallions, starting with the white ends first, and blanch for about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy. Immediately transfer the blanched scallions to an ice bath or rinse under cold running water to stop the cooking. Drain them well, squeezing out any excess water.
Step 3
Lightly toast the 10 sheets of dried gim in a dry pan over medium heat until they become slightly crisp and fragrant. Toasting enhances their flavor and texture.
Step 4
Once cooled slightly, place the toasted gim into a plastic bag and crumble them into small pieces by hand. Aim for a slightly coarse texture rather than a fine powder for better texture in the salad.

In a large mixing bowl, combine the prepared scallions and julienned carrots. Add the fish sauce, plum extract, and minced garlic. Gently toss and mix everything together with your hands, ensuring the seasoning coats the scallions evenly. The carrots add a lovely crunch and vibrant color.

Sprinkle the crumbled gim evenly over the seasoned scallions and carrots.

Drizzle in the toasted sesame oil and add the crushed toasted sesame seeds. Toss gently one more time to combine everything. Garnish with a few whole sesame seeds for extra aroma and visual appeal.
