I absolutely love one-bowl meals that are easy to make, eat, and clean up! Fried rice, in particular, is an indispensable one-bowl dish for me, whether I’m dining alone or packing a lunchbox for my husband. Today, I’ve made a scallion and egg fried rice packed with umami, using scallions, eggs, garlic, and oyster sauce that are always stocked at home!

Ingredients

  • 1 stalk of scallion
  • 2 eggs
  • 1 bowl of cooked rice
  • 5 cloves of garlic
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • Cooking oil, as needed

Cooking Instructions

Finely chop the scallions. Ensure they are washed thoroughly before chopping.

Thinly slice the garlic cloves. This preparation helps to release their aromatic oils.

Heat a generous amount of cooking oil in a frying pan over medium-high heat.

Add the chopped scallions, sliced garlic, and minced garlic to the hot oil. Stir-fry vigorously over high heat for about 1-2 minutes until fragrant and lightly golden, creating a flavorful scallion-garlic oil.

Once the scallions and garlic are nicely browned and aromatic, push them to one side of the pan to create space for the eggs.

Crack the 2 eggs directly into the empty space in the pan.

As the eggs begin to set, scramble them with a spatula or chopsticks until cooked through, forming soft scrambled eggs.

Once the scrambled eggs are ready, move them to the side of the pan along with the scallion and garlic mixture.

Pour 1 tablespoon of soy sauce into the hottest part of the pan, where the oil is concentrated.

Allow the soy sauce to caramelize and sizzle for a few seconds until it darkens slightly. Then, gently scrape and mix it with the scrambled eggs and scallion-garlic mixture. This step adds a wonderful ‘wok hei’ or smoky flavor to the fried rice!

Add 1 bowl of cooked rice and 1/2 tablespoon of oyster sauce to the pan. Stir-fry everything together thoroughly, breaking up any clumps of rice, until well combined and heated through. Your delicious scallion and egg fried rice is now ready to be enjoyed!
