Main Ingredients- 1L water
- 1 bowl cooked rice
- 1 can (100g) tuna
- 80g carrot
- 100g broccoli
- 1 king oyster mushroom
Cooking Instructions
Step 1
First, prepare your vegetables. Briefly blanch the 100g of broccoli in boiling water, then rinse under cold water and drain. Finely chop the blanched broccoli and the 80g of carrot. This process helps to retain the texture of the vegetables and ensures they blend well into the porridge.
Step 2
Drain the oil thoroughly from the 100g can of tuna. Removing excess oil is key to making the porridge less greasy and enhancing its delicate flavor.
Step 3
Using a julienne peeler or a knife, shred the 1 king oyster mushroom into thin strips. Shredding the mushroom creates a pleasant, soft texture that complements the porridge.
Step 4
Now, let’s sauté. Heat a generous amount of sesame oil in a pot over medium heat. Add the chopped carrots first, as they are the firmest vegetable, and sauté for 1-2 minutes until they begin to soften slightly. This step brings out the natural sweetness of the carrots.

Once the carrots are slightly tender, add the shredded king oyster mushroom and the chopped broccoli. Pour in 1 Tbsp of tuna extract (or fish sauce) and continue to sauté for another 2-3 minutes. This step helps to develop the flavors of the vegetables and meld them together.

Add 1L of water and 1 bowl of cooked rice to the pot with the sautéed vegetables. Increase the heat to medium-high and bring to a boil, stirring occasionally to prevent the rice from sticking to the bottom. Make sure to break up any clumps of rice as it cooks.

As the porridge begins to boil vigorously, skim off any foam that rises to the surface. Removing this foam will result in a clearer and cleaner-tasting porridge.
