Hello everyone! Today, I’m sharing a simple pork stir-fried udon recipe that you can make using ingredients you already have in your fridge. The chewy udon noodles, tender pork, and colorful vegetables come together to make a satisfying meal. The sweet and savory sauce will tantalize your taste buds, making it a hit with the whole family. With no complicated cooking steps, you can whip this up in no time, making it a stress-free option even on busy days!
Main Ingredients- Pork shoulder (lean cut) 200g
- Udon noodles 1 serving
- Crown daisy (Shungiku) a small bunch
- Fish cake 1/2 sheet (optional)
Cooking Instructions
Step 1
First, wash and prepare all the vegetables. Finely chop the green onions. Roughly chop the crown daisy as well.
Step 2
Julienne the carrot. Its vibrant color will add visual appeal and flavor to the dish.
Step 3
Julienne the cabbage too. I find cone-shaped cabbage easier to use and store.
Step 4
Julienne the onion to complete the vegetable preparation.
Step 5
Cut the pork shoulder into long, thin strips. Choose a cut with less fat. Pork shoulder is a good choice if you don’t have a preference.

If you have fish cake, slice it into bite-sized pieces. Using leftover ingredients is a great way to minimize waste.

Now, let’s stir-fry! Heat a little cooking oil in a frying pan and add the chopped green onions. Stir-fry until fragrant. Infusing the oil with scallion aroma adds depth of flavor.

Add the sliced pork shoulder and stir-fry until it’s no longer pink on the outside.

Once the pork is partially cooked, add the carrots, fish cake, and onions. Stir-fry together until the vegetables are slightly softened.

Finally, add the cabbage and continue to stir-fry.

Now it’s time to season! Add 3 tablespoons of store-bought udon sauce and 3 tablespoons of water.

Add 1 tablespoon of sugar for sweetness.

Add 1 tablespoon of vinegar to provide a touch of acidity that balances the flavors.

Add 1 tablespoon of soy sauce for umami. (Adjust the soy sauce amount to your preference.)

Stir everything to combine the sauces, then add the udon noodles. Stir-fry well with the other ingredients until everything is evenly coated.

Continue to stir-fry until the noodles have absorbed the sauce and it has thickened slightly. Be careful not to let it get too dry.
