  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 2 servings
  • Difficulty : Beginner

Main Ingredients
  • 2 bowls of warm cooked rice
  • 3-4 slices of pork neck (approx. 200g)
  • 1/2 head of cabbage
  • 1 large handful of fresh bean sprouts
  • 1 stalk of green onion
  • 1 Tbsp butter
  • 2 drizzles of oligodang (corn syrup/isomaltose, adjust to taste)
  • Pinch of black pepper

Special Sauce
  • 4 Tbsp Tonkatsu sauce (Japanese pork cutlet sauce)
  • 2 Tbsp Oyster sauce
  • 2 Tbsp Soy sauce
  • 2 Tbsp Mirin (rice wine)
  • 1/2 Tbsp Sugar (or to taste)
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

First, wash the cabbage thoroughly, drain any excess water, and then slice it into 1cm thick, appealing strips. Keeping the cabbage crisp is key!

Step 2

Cut the tender pork neck into bite-sized pieces, about 3-4cm in length, to ensure a pleasant chew. Avoid cutting them too small, as this can diminish the texture.

Step 3

Let’s make the special sauce, the heart of this delicious bowl! In a bowl, combine 4 Tbsp of Tonkatsu sauce, 2 Tbsp of Oyster sauce, 2 Tbsp of Soy sauce, 2 Tbsp of Mirin, 1/2 Tbsp of sugar, and 1/2 Tbsp of minced garlic. Whisk everything together until well combined. Feel free to adjust the sweetness or saltiness to your preference for an even tastier result.

Step 4

Heat a pan over medium-high heat and melt 1 Tbsp of butter until fragrant. Once the butter is melted, add the sliced pork neck and stir-fry over high heat until it’s nicely browned. It’s important to cook it quickly to seal in the juices.

Step 5

As the pork neck begins to release its savory aroma, add a pinch of black pepper to eliminate any gamey odors and enhance the overall flavor.

Step 6

Now, add the chopped green onion to the pan and stir-fry briefly with the pork neck until fragrant. The natural sweetness of the green onion will complement the pork beautifully.

Step 7

Once the pork neck is cooked through, add the prepared cabbage to the pan. Pour the special sauce over everything and stir well to ensure the sauce evenly coats the meat and vegetables as it cooks.

Step 8

When the cabbage has slightly softened and the sauce has nicely coated the pork and vegetables, add the fresh bean sprouts. Toss gently for just a short time; overcooking bean sprouts will release excess water and make them limp, so a quick stir is best to maintain their crunch.

Step 9

Final touch! Drizzle about two turns of oligodang (adjust to your sweetness preference) for a glossy finish and a hint of sweetness. Add a single drop of sesame oil for a fragrant aroma. Serve generously over warm rice for a visually appealing and delicious Pork Neck and Cabbage Rice Bowl! This is a true rice thief. It’s perfect for a hearty meal and even makes a great, simple appetizer for drinks. Give it a try! *^.^*
