Main Ingredients- 200g thinly sliced beef for bulgogi
- 1/2 onion, thinly sliced
- A small bunch of chives or green onions, finely chopped for garnish
- 3-4 eggs
- Mayonnaise, to taste
- A pinch of sesame seeds
- A pinch of black pepper
Beef Marinade Ingredients- 1/2 Tbsp sugar
- 1 Tbsp mirin (rice wine)
Bulgogi Sauce Ingredients- 2.5 Tbsp soy sauce
- 1 Tbsp corn syrup (or other liquid sweetener)
- 1/2 ~ 1 Tbsp sugar (adjust to taste)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp minced garlic
- A pinch of black pepper
- 1/2 Tbsp sugar

Cooking Instructions
Step 1
[Marinate the Beef] First, gently press the thinly sliced beef with paper towels to remove excess blood. In a bowl, combine the beef with the marinade ingredients: 1/2 Tbsp sugar and 1 Tbsp mirin. Mix well by hand and let it marinate for about 5 minutes. This step helps tenderize the meat and remove any unwanted odors.

[Make the Delicious Sauce] In a separate bowl, combine the bulgogi sauce ingredients: 2.5 Tbsp soy sauce, 1 Tbsp corn syrup, 1/2 to 1 Tbsp sugar (you can adjust this based on your sweetness preference), 2 Tbsp mirin, 1 Tbsp minced garlic, and a pinch of black pepper. Stir everything together with a spoon until the sugar is dissolved and the sauce is well combined. Set aside.

Gently toss everything together to ensure the beef and onions are evenly coated with the sauce. Let this marinate for another 10 minutes to allow the flavors to meld beautifully.

[Create Fluffy Scrambled Eggs] In another bowl, crack 3-4 eggs. Beat them well with a fork or whisk, making sure to break the chalazae (the white, stringy bits). Heat a non-stick pan over medium-low heat with just a tiny bit of oil. Pour in the beaten eggs. Stir gently with a chopstick or spatula as the eggs cook to create soft, fluffy scrambled eggs. I like mine a bit moist, so I turn off the heat when they are about 80% cooked; the residual heat will finish cooking them to a perfect tenderness. (Tip: Since the bulgogi sauce is already seasoned, there’s no need to add salt or pepper to the eggs.)

[Stir-fry the Bulgogi] Now, heat your pan over high heat. Add the marinated beef and onions to the hot pan and stir-fry quickly. Be careful not to overcook the beef, as it can become tough. Once the beef changes color and is just cooked through, remove it from the heat immediately.
