Main Ingredients
  • Boiled peanuts, shelled (350g)
  • Sliced almonds, a handful (approx. 10g)
  • Cooking wine (Mirin or Sake) 1 Tbsp

Seasoning
  • Soy sauce 2 Tbsp
  • Oyster sauce 1 Tbsp
  • Oligosaccharide (or corn syrup) 3 Tbsp
  • Water 4 Tbsp
  • Sesame oil 1/2 Tbsp
  • Toasted sesame seeds 1 Tbsp
  • Parsley flakes 1/2 Tbsp (optional)

Cooking Instructions

Step 1

Wash the fresh raw peanuts thoroughly under running water while they are still in their shells. Place them in a pot with plenty of water and boil for about 15-20 minutes, or until tender enough to be pierced easily with a chopstick. Drain the boiled peanuts and, while still warm, gently rub them with your hands to easily remove the inner skin. Rinse the peanuts under cold water to wash away any remaining skin bits, then drain them completely in a colander.

Step 2

In a small bowl, combine the soy sauce (2 Tbsp), oyster sauce (1 Tbsp), oligosaccharide (3 Tbsp), and water (4 Tbsp). Whisk together until well blended to create the braising sauce. Having the sauce pre-mixed makes the cooking process smoother.

Step 3

Heat a pan over medium-low heat. Add the drained, shelled peanuts and the cooking wine (1 Tbsp). Sauté for about 1-2 minutes. This step helps to eliminate any potential ‘beany’ smell from the peanuts and enhances their flavor. Since they are already boiled, they don’t need to be cooked for long.

Step 4

Pour the prepared braising sauce over the lightly sautéed peanuts in the pan. Stir well with a spatula to ensure the peanuts are evenly coated. Let the sauce simmer and reduce over medium-low heat, stirring occasionally to prevent sticking.

Step 5

When the sauce has reduced by about half, making it thick and glossy, add the sliced almonds. Continue to cook and stir for another minute or two, allowing the almonds to toast slightly and mix with the peanuts and sauce. Be careful not to burn the almonds.

Step 6

Once the sauce has almost completely reduced and coats the peanuts beautifully, turn the heat to low. Stir in the sesame oil (1/2 Tbsp), toasted sesame seeds (1 Tbsp), and parsley flakes (1/2 Tbsp, if using). Mix well and then turn off the heat. Let the braised peanuts cool slightly in the pan before transferring them to a serving container. Enjoy your delicious homemade braised peanuts!
