Savory Sweet and Salty Stir-fried Fish Cakes with Mushrooms
Delicious Side Dish Made with Shiitake Mushrooms and Fish Cakes!
Try making this delicious, sweet and savory side dish with mushrooms and fish cakes! ^^ It’s a perfect, easy-to-make banchan (Korean side dish) that’s flavorful and great for meal prepping.
Main Ingredients- 2 Shiitake mushrooms
- 2 sheets of fish cake (eomuk)
- 1/4 Onion
Cooking Instructions
Step 1
First, prepare your ingredients. Wash the 2 shiitake mushrooms and slice them into bite-sized pieces, about 0.5cm thick. Blanch the 2 sheets of fish cake in boiling water to remove excess oil, then cut them into bite-sized pieces. Slice the 1/4 onion into strips. Blanching the fish cake removes impurities and makes them softer.
Step 2
Lightly oil a pan and heat it over medium heat. Add the sliced onion first and stir-fry until it becomes slightly translucent. Sautéing the onions first will bring out their sweetness and enhance the overall flavor.
Step 3
Once the onions are slightly cooked, add 0.5 Tbsp of minced garlic and stir-fry until fragrant. Then, add the sliced shiitake mushrooms and cook until they start to soften slightly.
Step 4
When the shiitake mushrooms are partially cooked, add the cut fish cakes and stir-fry together. At this stage, adding 1 Tbsp of water will prevent the ingredients from sticking and help create a moister stir-fry. Stir everything well to combine.
Step 5
Now it’s time for the seasoning. Add 1 Tbsp of soy sauce and 1 Tbsp of corn syrup. Reduce the heat to medium-low. Stir the ingredients to ensure the sauce is evenly distributed and continue to stir-fry for about 1-2 minutes until the flavors meld. Adjust the sweet and savory balance to your liking.
Step 6
Finally, just before turning off the heat, drizzle in 1 Tbsp of sesame oil. The nutty aroma of the sesame oil will make this fish cake stir-fry even more delicious and appealing. Give it one last gentle stir.
