Super Easy Zucchini Salad Recipe
Create a delicious homemade side dish with this incredibly simple zucchini salad! It’s quick, flavorful, and perfect for any meal.
Main Ingredients- 1/3 medium zucchini (about 150g)
- 1 Tbsp cooking oil
Seasoning Sauce- 1 tsp minced garlic (approx. 1 clove)
- 1 Tbsp soy sauce (use Korean soup soy sauce or regular soy sauce)
- 1/2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1/2 Tbsp sesame oil
- Pinch of toasted sesame seeds (optional)

Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Trim off the ends and slice it into bite-sized pieces, about 0.5cm thick. You can cut them into half-moons or lengthwise. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness.
Step 2
In a small bowl, combine the minced garlic, soy sauce, gochugaru, and sesame oil. Mix them well to create a flavorful seasoning sauce. If you like, you can add a pinch of toasted sesame seeds for an extra nutty aroma.
Step 3
Heat the cooking oil in a non-stick pan over medium heat. Add the sliced zucchini, ensuring they don’t overlap too much. Pan-fry for about 2-3 minutes per side, until they are lightly golden brown and tender. Be careful not to overcook, as they can become mushy.
Step 4
Transfer the nicely sautéed zucchini to a bowl. Pour the prepared seasoning sauce over the zucchini. Using gloves or chopsticks/a spoon, gently toss and mix the zucchini with the sauce until well coated. It’s important to mix gently to avoid breaking the zucchini pieces.
Step 5
Your simple yet delicious zucchini salad is ready! You can serve it immediately, or chill it in the refrigerator for a refreshing side dish. It makes a wonderful accompaniment to a bowl of hot rice.
