Instead of the usual salt seasoning, this recipe uses Korean anchovy sauce (‘Galchi Aekjeot’) for a depth of savory flavor. We’ve julienned potatoes and carrots for color and texture, a touch of sugar for sweetness, and the star of our seasoning, anchovy sauce. For a beautiful visual and added nutritional benefits, we’ve incorporated black sesame seeds. Ingredients

  • 5 medium Potatoes
  • 1 Carrot
  • 1 Tbsp Black Sesame Seeds
  • 1 tsp Minced Garlic
  • 2 Tbsp Anchovy Sauce (Galchi Aekjeot)
  • A pinch of Black Pepper
  • 1 tsp Sugar
  • 1 tsp Sesame Oil
  • 1 Tbsp Cooking Oil

Cooking Instructions

Step 1

First, wash the potatoes and carrot thoroughly. Julienne them into thin strips, about 0.5 cm thick. Heat a frying pan over medium heat and add 1 Tbsp of cooking oil. Add the julienned potatoes and carrots and begin to stir-fry. Cook until the potatoes start to look translucent.

Once the potatoes are partially cooked, add 2 Tbsp of anchovy sauce, 1 tsp of sugar, and a pinch of black pepper to the pan. Continue to stir-fry everything together, ensuring the anchovy sauce is evenly distributed among the potato and carrot shreds. It’s important to stir frequently during this step. Keep the heat on medium-low.

When all the ingredients are well-cooked and have absorbed the flavors, reduce the heat to low. Add 1 Tbsp of black sesame seeds and gently toss to combine. Just before turning off the heat, drizzle in 1 tsp of sesame oil for an extra layer of nutty aroma.
