- 1/2 onion

Seasoning Ingredients- 3 Tbsp soy sauce
- 1 Tbsp corn syrup
- 0.5 Tbsp minced garlic

Cooking Instructions
Step 1
Wash the shiitake mushrooms thoroughly under running water and prepare them. If you are using dried shiitake mushrooms, you will need to soak them in water for about a day to soften them before use. Fresh shiitake mushrooms can be prepared immediately.
Step 2
Trim off the tough, woody stems from the shiitake mushrooms. The stems can have a chewy texture that detracts from the finished dish, so it’s best to remove them cleanly.
Step 3
Blanch the prepared shiitake mushrooms in boiling water with a pinch of salt for about 1 to 2 minutes. This step helps to remove any impurities and achieve a cleaner flavor. Be careful not to overcook, as they can become mushy.

Immediately transfer the blanched shiitake mushrooms to cold water. Cooling them in cold water stops the cooking process, helping to maintain their chewy texture. Also, shiitake mushrooms that have been blanched and cooled in water won’t release as much liquid when stored as a side dish.

Gently squeeze out excess water from the shiitake mushrooms with your hands, then slice them into pieces about 0.5 cm thick. Slicing them a bit thicker will help them retain a better texture during stir-frying, as very thin slices can break apart.

Slice the onion into strips about 0.5 cm thick, and cut the green onion into 5 cm lengths, then slice them thinly into strips. The onion will add sweetness, and the green onion will impart a lovely aroma, enhancing the overall flavor of the dish.

Heat about 1 tablespoon of cooking oil in a pan over medium heat. Add the thinly sliced green onions and stir-fry until they become fragrant. Cooking the green onions first to release their aroma will significantly improve the dish’s savory depth.
