Tired of just seaweed soup? Try stir-fried seaweed! This recipe offers a delightfully chewy and savory seaweed stir-fry with miso paste. It’s a fantastic way to enjoy seaweed with a unique texture and flavor profile.
Ingredients- 2 handfuls of rehydrated dried seaweed
- 3 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce (or Korean soup soy sauce)
- 1 Tbsp miso paste
- 1/2 Korean chili pepper (optional)
- Pinch of black pepper
- Pinch of sesame seeds
Cooking Instructions
Step 1
First, rehydrate the dried seaweed by soaking it in cold water. Did you know that dried seaweed expands significantly when soaked? A common mistake for beginners is misjudging the amount. About 20g of dried seaweed is usually enough for 2-3 people. I soaked a bit more because I plan to make seaweed soup as well. You can get away with just 10g if you’re only making the stir-fry.
Step 2
Once the seaweed is fully rehydrated, gently knead it with your hands and rinse it thoroughly several times under cold water. Then, cut the seaweed into bite-sized pieces. If your seaweed is already cut, you can use it as is. Drain the water well using a colander.
Step 3
Place the drained seaweed into a frying pan. Drizzle generously with 3 tablespoons of sesame oil for a rich, nutty flavor.
Step 4
Now, stir-fry the seaweed over medium-low heat until it becomes slightly chewy and most of the moisture has evaporated. This should take about 10 minutes. Stir-frying helps to achieve a pleasant, firm texture and enhances the nutty aroma.
Step 5
Add 1 tablespoon of minced garlic and continue to stir-fry for another 1-2 minutes until the garlic is fragrant and cooked through. Be careful not to burn the garlic.
Step 6
If you add miso paste directly at this stage, it might not mix in smoothly. To help it blend well, add about half a paper cup of water to the pan.
Step 7
Now, add 1 tablespoon of miso paste and 1 tablespoon of soy sauce. Stir everything together well and continue to cook until the sauce is evenly distributed and slightly thickened. For a cleaner taste, you can omit the miso and use only soy sauce. I chose to combine both for a richer flavor.
Step 8
For a touch of heat, finely slice half a Korean chili pepper and add it to the pan. The mild spiciness provides a refreshing contrast that makes the dish even more delicious.

And there you have it – a simple and delicious stir-fried seaweed with miso! The nutty flavor of the seaweed, enhanced by the sesame oil and miso, makes this a perfect side dish that pairs wonderfully with rice. Enjoy the satisfying chewy texture!
