The chewy yet tender texture of the radish, combined with the profound umami from the anchovy-kelp broth, is simply exquisite. Key Ingredients- 300g radish (about 1/3 of a medium radish)
- 2 Tbsp perilla oil (deulgireum)
- 1/2 stalk scallion, finely chopped
- 1 cup anchovy-kelp broth (using a standard paper cup)
- Pinch of salt (to taste)
- 1 Tbsp sesame seeds (for extra nuttiness)
Cooking Instructions
Step 1
First, wash and prepare 300g of radish. Peel off the thin outer skin, and then slice it into very thin strips. Slicing thinly is key, as it ensures the radish cooks quickly and becomes tender. Thin slices also allow the seasonings to penetrate better, resulting in a more flavorful dish.
Step 2
Next, prepare 1/2 stalk of scallion. Finely chop it to add a fragrant aroma to the dish. If you have green onions (spring onions), they can also be used for a wonderful flavor. Having the scallions pre-chopped will make the cooking process much smoother.

Now, preheat a pan over low heat. Once the pan is warm, add 2 tablespoons of perilla oil and place the thinly sliced radish into the pan.
