Main Ingredients

  • Dried anchovies (small or medium) 1 cup (using a paper cup for measurement)
  • Potatoes 2 (medium-sized)
  • Korean green chili peppers 2 (optional)

Seasoning Sauce

  • Soy sauce 2 Tbsp
  • Sugar 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sesame oil 1/2 Tbsp
  • Water 1/2 cup

Cooking Instructions

First, peel the potatoes thoroughly and prepare them. If there’s any dirt, wash them clean.

Cut the prepared potatoes into bite-sized pieces, about 5mm thick. If they are too thick, they might take longer to cook.

Chop the Korean green chili peppers after removing the stems. If you enjoy a spicier kick, you can leave the seeds in, but for milder palates or children, it’s best to remove them.

Add the dried anchovies to a pan and stir-fry them over medium-low heat for about 1-2 minutes until their fishy smell dissipates. Transfer the stir-fried anchovies to a separate plate for now.

Add a little oil to the same pan used for the anchovies. Then, add the sliced potatoes and stir-fry them over medium-low heat. Cooking the potatoes until they become slightly translucent will help them absorb the sauce better.

Once the potatoes start to cook, pour in the prepared seasoning sauce (soy sauce, sugar, minced garlic, water) and bring it to a simmer over medium heat. The sauce will reduce and begin to coat the potatoes with flavor.

When the sauce has almost reduced and become syrupy, return the stir-fried anchovies to the pan. Stir-fry them together with the potatoes, mixing evenly. Be gentle to avoid breaking the anchovies.

Finally, add the chopped Korean green chili peppers and stir-fry briefly. Adding the chili peppers just before turning off the heat helps retain their crisp texture and fresh aroma. After turning off the heat, sprinkle with sesame seeds for an extra nutty flavor and a delicious finish.
