Main Ingredients

  • Radish (150g), cut into bite-sized pieces
  • Petasites stems (100g), leaves separated and stems prepared
  • Red chili pepper (1), seeds removed and finely chopped
  • Green chili pepper (1), seeds removed and finely chopped (add more for extra spice)
  • Petasites leaves (a small amount, for wraps or stir-frying)

Seasoning

  • Salt (1 tsp, for seasoning)
  • Minced garlic (1 tsp)
  • Perilla powder (2-3 Tbsp, for a nutty flavor)
  • Sesame oil (1 tsp)
  • Cooking oil (1 Tbsp)
  • Water (1 cup)

Cooking Instructions

Step 1

First, carefully separate the leaves from the stems of the Petasites. Set the leaves aside and wash the stems thoroughly under running water.

Step 1

Step 2

Bring a pot of water to a rolling boil and add 1 teaspoon of salt. Blanch the Petasites leaves for about 1 minute and the stems for about 3 minutes. (Tip: Adjust the blanching time based on the size and tenderness of your Petasites. Young stems might only need 3 minutes, while firmer stems may require 5-7 minutes to become tender.)

Step 2

Step 3

Rinse the blanched Petasites leaves thoroughly in cold water, scrubbing gently to remove any bitterness, and squeeze out excess water. For the stems, use a knife to scrape off any tough outer skin, then cut them into manageable pieces.

Step 3

Step 4

Slice the radish into pieces similar in size to the Petasites stems, or slightly thinner. Cutting them too thick will increase cooking time.

Step 4

Step 5

Remove the stems and seeds from the red and green chili peppers, then finely chop them. (Tip: You can substitute green chilies for red ones if you prefer less heat.)

Step 5

Step 6

Heat cooking oil in a pan over medium heat. Add the prepared Petasites stems and sliced radish and stir-fry. Add the minced garlic and continue to stir-fry until fragrant.

Step 6

Step 7

Once the radish begins to turn translucent, add the chopped red and green chili peppers and mix well. Season with salt, stir-fry for another 2-3 minutes, then pour in 1 cup of water and let it simmer until the ingredients are partially cooked.

Step 7

Step 8

When the water comes to a boil, add 2-3 tablespoons of perilla powder. Stir well with a spatula to ensure the perilla powder is evenly incorporated and doesn’t clump.

Step 8

Step 9

After mixing in the perilla powder and simmering for another 1-2 minutes on low heat, turn off the stove. Finish by drizzling with 1 teaspoon of sesame oil and sprinkling with sesame seeds.

Step 9

Step 10

Serve this flavorful stir-fried Petasites with radish and perilla powder alongside freshly cooked rice, or wrap it in fresh lettuce leaves for an extra treat. Enjoy the harmonious blend of the fragrant Petasites and the nutty perilla!
