Introducing a recipe for oyster mushroom stir-fry packed with nutritious vegetables, perfect for my little one who loves mushrooms! It’s simple yet rich in flavor and nutrition, making it an excellent side dish for any meal. The subtle mushroom aroma combined with the crisp texture of vegetables creates a dish that even children will happily eat without fuss.
Main Ingredients- 1 pack Oyster Mushrooms (approx. 200g)
- 1/4 Carrot (approx. 30g)
- 1 Korean Green Chili Pepper (optional, omit if you prefer less spice)
- 1-2 Tbsp Canola Oil or Vegetable Oil
Seasoning & Condiments- 1/2 tsp Salt (adjust to taste)
- 1 tsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 1/2 tsp Minced Garlic
- 1/2 tsp Salt (adjust to taste)
- 1 tsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 1/2 tsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the oyster mushrooms for cooking. Remove them from the packaging and lightly rinse under clean water to get rid of any dirt or debris. Be careful not to rinse them for too long under running water.
Step 2
Gently tear the oyster mushrooms by hand into bite-sized pieces. If they are cut too small, they might lose some texture when stir-fried. It’s best to tear them into pieces of a similar thickness.
Step 3
Bring a generous amount of water to a rolling boil in a pot. Once the water is boiling, add 1/2 tsp of salt. Adding salt helps to remove any gamey smell from the mushrooms and enhances their color.
Step 4
Add the torn oyster mushrooms to the boiling water and blanch them briefly. Blanching for just 30 seconds to 1 minute will help maintain the mushrooms’ crisp texture. Be cautious, as over-blanching can make them mushy.
Step 5
Immediately after blanching, rinse the oyster mushrooms under cold running water to cool them down. This step helps preserve their crispness. Rinsing with cold water also helps prevent moisture loss.
Step 6
Gently press the rinsed mushrooms between your hands to squeeze out excess water, or drain them thoroughly in a colander. Ensuring most of the water is removed will result in a less soggy stir-fry. Drizzle 1 tsp of sesame oil over the drained mushrooms.
Step 7
Sprinkle 1/2 tsp of salt (or to your preference) over the mushrooms to season them. This enhances their natural flavor while adding a savory note.
Step 8
Add 1/2 tsp of minced garlic. The garlic’s aroma will blend well with the mushrooms, making the dish even more delicious.
Step 9
Gently mix the mushrooms with the sesame oil, salt, and minced garlic to marinate them. Toss them lightly along the grain of the mushrooms so they don’t break apart.
Step 10
Peel and wash the carrot, then slice it into thin julienne strips. Slicing them thinly ensures they cook evenly and quickly.
Step 11
Remove the stem from the Korean green chili pepper, cut it in half, remove the seeds, and julienne it finely, similar to the carrot. If you prefer less heat or are cooking for children, you can omit this or substitute with a regular bell pepper.
Step 12
Heat 1-2 Tbsp of canola oil or vegetable oil in a pan over medium heat. Preheating the oil helps prevent the ingredients from sticking.
Step 13
Add the marinated oyster mushrooms to the hot pan and stir-fry for about 1-2 minutes, until they start to soften and become slightly translucent.
Step 14
Once the mushrooms are partially cooked, add the julienned carrots and Korean green chili pepper. Adding vegetables contributes color, texture, and nutritional balance to the dish.
Step 15
Continue to stir-fry for another 2-3 minutes until all ingredients are well combined. Cook the carrots until they are slightly tender and translucent. Avoid overcooking, as this can diminish the crispness of the vegetables.
Step 16
Finally, drizzle about 1/2 tsp of sesame oil (adjust to your liking) and sprinkle with toasted sesame seeds to finish. The savory aroma of sesame oil and the nutty flavor of the seeds will enhance the overall taste. Stir gently to combine. Your delicious stir-fried oyster mushrooms with vegetables are ready!
