Ingredients
  • Boiled Ferns: 300g (store-bought or rehydrated and boiled dried ferns)
  • Green Onion: 1/2 stalk, finely chopped
  • Water: 1/2 cup (100ml)

Seasoning
  • Minced Garlic: 1 Tbsp
  • Cooking Oil: 2 Tbsp
  • Sesame Oil (perilla oil): 1 Tbsp
  • Soy Sauce for Soup (Guk-ganjang): 1 Tbsp
  • Anchovy Sauce (Myeolchi-aekjeot): 1/2 Tbsp (for extra umami!)
  • Sesame Seeds: a pinch, for garnish

Cooking Instructions

Step 1

First, check the condition of your boiled ferns. Gently touch the ends of the ferns; if you feel any tough or fibrous parts, trim them off. This step is crucial to ensure a pleasant eating experience, preventing the need to spit out tough pieces. (If using dried ferns, soak them overnight in cold water, then boil for 30 minutes. After turning off the heat, let them sit in the hot water for about an hour to become tender.)

Step 2

Next, prepare half a stalk of green onion and chop it finely. Adding it during cooking will enhance the overall flavor profile of the dish.

Step 3

Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and sauté until fragrant, being careful not to burn it. Creating a flavorful garlic oil is key to the dish’s deliciousness!

Step 4

Once the fragrant garlic oil is ready, add the prepared ferns to the pan. Increase the heat to medium and stir-fry for about 5 minutes, allowing the ferns to absorb the garlic oil thoroughly. The ferns will soften and wilt as they cook.

Now it’s time to add the seasoning for that delightful umami boost. Stir in 1 Tbsp of soy sauce for soup, 1/2 Tbsp of anchovy sauce, and 1 Tbsp of sesame oil. Add 1/2 cup (100ml) of water and mix well to combine all the seasonings.

Cover the pan with a lid and let it simmer over medium-low heat. This braising process allows the flavors to meld and the seasoning to penetrate deeply into the ferns, making them extra delicious.

Step 7

When the liquid in the pan has reduced by about half, add the chopped green onions. Switch the heat back to medium and, with the lid off, continue to stir-fry until any remaining moisture evaporates, ensuring the ferns don’t stick to the pan.

Step 8

Cook until the liquid is almost gone. Taste the dish and adjust the seasoning with more soy sauce for soup if needed. Finally, sprinkle with sesame seeds for a nutty aroma. Your delicious and flavorful fern stir-fry is now complete and ready to be enjoyed!
