A Must-Have for Holiday Feasts: Delicious Three-Color Vegetable Side Dish, Stir-Fried Fern!
This is a stir-fried fern dish, one of the essential ‘three-color’ vegetable side dishes served during Korean holidays. Enjoy this nutty and slightly bitter fern, stir-fried to a tender perfection, making it a wonderful accompaniment to any meal.
Main Ingredients- 400-500g boiled fern
- A little green onion (finely chopped)
Seasoning- 2 Tbsp sunflower oil
- 1 tsp minced garlic
- 3 Tbsp soup soy sauce (Guk-ganjang)
- 1 tsp sugar
- 1 Tbsp cooking wine (or Cheongju)
- 1 tsp sesame oil
- A little toasted sesame seeds (for garnish)
- 2 Tbsp sunflower oil
- 1 tsp minced garlic
- 3 Tbsp soup soy sauce (Guk-ganjang)
- 1 tsp sugar
- 1 Tbsp cooking wine (or Cheongju)
- 1 tsp sesame oil
- A little toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the boiled fern. Rinse it under cold running water 1 to 2 times. While rinsing, discard any pieces that are overly mushy or falling apart to ensure a neater stir-fry.
Step 2
Gently drain the water from the rinsed fern. If the fern stalks are too long, cut them once into bite-sized pieces. Add the finely chopped green onion, soup soy sauce, sugar, cooking wine, and minced garlic to the fern. I add a little sugar to balance the fern’s natural slight bitterness. (Optional: You can add a pinch of black pepper if you like, or omit the minced garlic if preparing for ancestral rites where garlic is traditionally excluded.)
Step 3
Gently mix the ingredients with your hands until all the seasonings are evenly distributed throughout the fern. Let it marinate for a short while to allow the flavors to meld.
Step 4
Heat sunflower oil in a pan over medium heat. Add the marinated fern and begin to stir-fry. To prevent the fern from becoming too dry, add about half a cup of water while stir-frying to maintain a moist and tender texture. Since the fern is already boiled, it doesn’t require long cooking. Stir-fry for no more than about 10 minutes.
Step 5
