Main Ingredients
  • 2 eggplants
  • 154g ground beef
  • 12 stalks green onions

Seasoning
  • 2 Tbsp soy sauce
  • 1 Tbsp oligodang (corn syrup)
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp minced garlic
  • 1 Tbsp 1 tsp sesame oil
  • A pinch of black pepper
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the two eggplants. Wash them thoroughly and cut them into bite-sized pieces.

Step 2

Cut the eggplants into pieces about 5cm (2 inches) long. Then, cut each long piece in half lengthwise. If the eggplant pieces are thick, cut them in half again.

Step 3

Continue cutting the eggplant into manageable, bite-sized pieces suitable for stir-frying. Adjust the size based on the thickness of the eggplant, cutting them into halves or quarters as needed.

Step 4

Once all the eggplant is cut, arrange it nicely, ready for stir-frying.

Step 5

Trim and finely chop the green onions. The fresh aroma of the green onions will add extra deliciousness to the dish.

Step 6

Now, let’s season the ground beef. In a pan, add the ground beef along with 1 Tbsp soy sauce, 1 Tbsp mirin, about 1 tsp of sesame oil, and a pinch of black pepper. Mix well to marinate.

Step 7

Stir-fry the beef over medium heat until it is completely cooked through. Cook until the pinkness disappears and the beef is lightly browned.

Step 8

Once the beef is nicely cooked, add all the prepared eggplant to the pan and stir-fry together. The eggplant will absorb some oil and become tender.

When the eggplant starts to soften and shrink in volume (wilted), it’s time to add the rest of the seasonings.

Add 1 Tbsp minced garlic, the remaining 1 Tbsp soy sauce, 1 Tbsp oligodang, and all the chopped green onions. Stir-fry quickly, ensuring all ingredients are well combined with the sauce. It’s important to keep stirring as you cook.

Step 11

Finally, just before serving, drizzle with the remaining 1 Tbsp sesame oil and sprinkle with 1 Tbsp toasted sesame seeds for a beautiful sheen and nutty aroma. Your delicious stir-fried eggplant and beef is ready! Enjoy it with a bowl of hot rice.
