Main Ingredients- 1 eggplant
- 1/2 stalk of green onion
- 1/2 onion
- 50g ground beef
Seasoning Ingredients- 2 Tbsp cooking wine (mirin)
- 1 Tbsp oyster sauce
- 2 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1/3 Tbsp sugar
- Pinch of black pepper
- 3 dried chilies or bird’s eye chilies

Cooking Instructions
Step 1
First, marinate the 50g of ground beef in 2 tablespoons of cooking wine. This step helps to remove any gamey odors and tenderize the meat, enhancing the overall flavor of the dish.
Step 2
Wash the eggplant thoroughly under running water. Trim off the stem end and cut it in half lengthwise. Then, slice it diagonally into bite-sized pieces. Eggplant shrinks when cooked, so cutting it slightly larger than you think is fine.

Heat a pan over medium-high heat and add a generous amount of chili oil or cooking oil. Add 1 tablespoon of minced garlic and stir-fry until fragrant, about 30 seconds. Then, add the marinated ground beef and cook until it’s no longer pink and is nicely browned.
Step 4
Once the beef is cooked, add the dried chilies, broken into smaller pieces, for a touch of heat. (If you prefer less spice, you can reduce the amount or omit them.) Immediately add the sliced eggplant, onion, and green onion to the pan. Stir-fry over high heat until the vegetables begin to soften and wilt slightly, retaining some of their crispness.
Step 5
When the vegetables have softened slightly, reduce the heat to low. Add the oyster sauce (1 Tbsp), soy sauce (2 Tbsp), sugar (1/3 Tbsp), and a pinch of black pepper. Stir everything together to combine. Increase the heat to medium-high and stir-fry for another 1-2 minutes, allowing the sauce to coat all the ingredients evenly and to thicken slightly.
Step 6
Once the flavors have melded and the dish has a nice sheen, turn off the heat. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds for added aroma and nutty flavor.
