How to Make Delicious Stir-Fried Eggplant with Beef / Simple Side Dish Recipe
Even eggplant haters will love this! A delightful dish where tender eggplant meets savory ground beef. Perfect as a quick and tasty side dish for any meal.
Ingredients- 2 medium eggplants
- 100g ground beef
- Cooking oil
- 2 Tbsp chopped green onion
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (like mirin)
- Pinch of black pepper
Cooking Instructions
Step 1
First, in a bowl, combine the 100g of ground beef with 1 Tbsp of cooking wine and a pinch of black pepper. Gently mix them together to marinate. This step helps to remove any gamey odors from the beef and makes it more tender.
Step 2
In a separate small bowl, whisk together 1 Tbsp of oyster sauce, 1 Tbsp of soy sauce, and 1 Tbsp of minced garlic to create the sauce mixture. Having the sauce ready beforehand makes cooking much smoother.
Step 3
Wash the 2 eggplants thoroughly under running water. Trim off the ends and cut them into bite-sized pieces. Aim for pieces that are not too thin, so they don’t fall apart during stir-frying.
Step 4
Heat a pan over medium-low heat, add a generous amount of cooking oil, and sauté the 2 Tbsp of chopped green onion until fragrant. This process, known as making ‘scallion oil,’ infuses the dish with a wonderful aroma and depth of flavor.
Step 5
Once the scallions are fragrant, increase the heat to medium-high. Add the marinated ground beef to the pan. Use a spatula or chopsticks to break up any clumps and stir-fry quickly until the beef is no longer pink. Cooking it fast helps keep the beef tender.
Step 6
When the beef is almost cooked through, add the cut eggplants to the pan. Stir-fry everything together until the eggplants start to soften and absorb the flavors. Pour in the prepared sauce mixture and stir well to coat all ingredients evenly.
Step 7
Continue to stir-fry for another 1-2 minutes, allowing the eggplants and beef to fully absorb the sauce. Taste the dish and add a little salt if needed to adjust the seasoning (remember that oyster sauce and soy sauce are already salty, so taste before adding more salt). Serve this delicious stir-fried eggplant with beef hot, perhaps over a bowl of steamed rice!
