Ingredients

  • 2 eggplants
  • 1 Tbsp minced garlic
  • 1.5 Tbsp cooking oil
  • 1 handful dried wood ear mushrooms (soaked in water)
  • 4 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp perilla oil (deulgireum)
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

Wash the eggplants, trim off the ends, and cut them into bite-sized pieces (about 2cm thick). If using dried wood ear mushrooms, soak them in lukewarm water until soft. Squeeze out excess water and chop them into smaller pieces than the eggplant.

Heat a pan over medium heat and add 1.5 Tbsp of cooking oil. Add the chopped eggplant and soaked wood ear mushrooms, and stir-fry. Once the eggplant starts to look slightly translucent, add 1 Tbsp of minced garlic, 4 Tbsp of soy sauce, and 1 Tbsp of honey. Continue to stir-fry until the sauce is well incorporated.

When the eggplant is tender and cooked through, and the sauce has thickened slightly, turn off the heat. Stir in 1 Tbsp of perilla oil and 1 Tbsp of sesame seeds for a final touch. Your delicious stir-fried eggplant is ready!
