Cooking Instructions
Step 1
First, use paper towels to thoroughly pat dry any excess blood or moisture from the duck meat (800g). Removing the blood well is key to a clean taste without any gamey odor.

Place the patted duck meat into a large bowl. Cut it into bite-sized pieces or a size that is easy to cook.

Add all the seasoning ingredients to the bowl with the duck meat. These include: 3 Tbsp gochujang, 3 Tbsp jin-ganjang, 3 Tbsp soju (helps remove odor and tenderizes the meat), 3 Tbsp won-dang (for sweetness and gloss), 2 Tbsp minced garlic, 1 tsp minced ginger, 2 Tbsp sesame oil, 2 Tbsp gochugaru, and a pinch of black pepper. Feel free to adjust the amount of gochugaru to your preferred spice level.
