Main Ingredients- Boiled dried radish greens (siraegi) 300g (thawed and squeezed dry if frozen)
- 1 can of tuna (drained)
- 6 perilla leaves (깻잎)
- 1/2 onion
Cooking Instructions
Step 1
First, if using frozen dried radish greens, thaw them completely. Then, rinse them under running water once or twice and gently squeeze out any excess water. This step helps to reduce any lingering ‘green’ flavor and ensures a tender texture.
Step 2
Drain the oil thoroughly from the canned tuna. Thinly slice the onion. Tear the perilla leaves into bite-sized pieces by hand to preserve their aroma. Have your minced garlic ready.
Step 3
Heat a dry pan over medium heat and add 3 tablespoons of perilla oil. Perilla oil will enhance the savory flavors of both the radish greens and the tuna.
Step 4
Add the squeezed dried radish greens, sliced onions, and minced garlic to the pan. Stir-fry them over medium heat until fragrant. The perilla leaves are added towards the end to prevent them from becoming too wilted; stir-fry just until the onions turn translucent and the radish greens become aromatic.
Step 5
In a small bowl, combine 3 teaspoons of doenjang and 1 teaspoon of gochujang. Gradually whisk in 200ml of the anchovy-and-kelp broth until the pastes are fully dissolved and the mixture is smooth. Pre-mixing the sauces ensures they incorporate evenly into the dish.
Step 6
Pour the dissolved sauce mixture into the pan with the stir-fried ingredients. Reduce the heat to medium-low and continue to cook, stirring frequently, until the liquid has mostly evaporated and the sauce coats everything beautifully. The radish greens should be moist and flavorful. Once the sauce has thickened and is well absorbed, remove from heat. Taste and adjust seasoning with a pinch of salt if needed.
