This 3-year aged kimchi stir-fry is guaranteed to be delicious no matter how you eat it! It’s a true ‘rice thief’ dish, packed with flavor, and we’re going to show you how to make it.
Aged Kimchi Stir-Fry Ingredients- 1/4 head of 3-year aged kimchi (approx. 300g)
- 3 Tbsp cooking oil (approx. 45ml)
- 2 Tbsp sesame oil (approx. 30ml)
- 1 Tbsp sugar (approx. 15g)
- 1/3 stalk of green onion (white parts mainly, approx. 30g)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare your 3-year aged kimchi. If the kimchi is too sour for your liking, you can briefly rinse it under water. However, for this recipe, we’ll use it as is to capture its deep, aged flavor. Open the packaging and check the kimchi’s condition.

Take out 1/4 of the aged kimchi head and place it in the frying pan you’ll be using for cooking. You can adjust the amount based on how aged or how much kimchi you have.

Since the aged kimchi might be too long to eat comfortably, use scissors to cut it into bite-sized pieces. Cutting them into lengths of about 2-3 cm will give a good texture when stir-fried.

Drizzle 3 tablespoons of cooking oil into the frying pan. The cooking oil will help the kimchi stir-fry smoothly without burning.
