Cooking Instructions

First, rinse the aged kimchi lightly under running water without brushing off the internal seasoning. Be careful not to wash too much, as it can diminish the unique kimchi flavor. Gently squeeze out excess water with your hands, then chop it into bite-sized pieces (about 1-1.5cm wide).

Heat a pan over medium heat and add a generous amount of perilla oil. Add the chopped aged kimchi. The key to delicious stir-fried aged kimchi is plenty of perilla oil, which softens the kimchi and adds a wonderful nutty flavor.

Stir-fry the aged kimchi over medium-low heat until it becomes tender. If you desire a deeper umami flavor, you can add dried anchovies (with the guts removed) or medium anchovies and stir-fry them together. However, for this recipe, we’re omitting anchovies as the children prefer it that way.

If the aged kimchi is too sour, add 1/2 tablespoon of sugar to gently neutralize the acidity. Sugar also helps to enhance the kimchi’s savory notes. Continue to stir-fry until the kimchi turns translucent and tender.
