Main Ingredients
- 1 can Spam (340g)
- 1 onion (medium size)
- 1/2 king oyster mushroom
Sauce
- 4 Tbsp water
- 1/3 Tbsp ginger syrup (or a little minced ginger)
- 1 Tbsp plum extract (or sugar)
- 1/2 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare one onion by slicing it thinly. Heat a pan over medium-low heat, add the sliced onions, and sprinkle with a pinch of salt. Sauté the onions slowly until they become tender and sweet. It’s important to cook them thoroughly until their natural sweetness is fully released.
Step 2
Once the onions become translucent and soft, add the sliced king oyster mushroom (1/2 mushroom). Sauté them together with the onions. Adding another pinch of salt to the mushrooms can enhance their savory flavor. Set aside the sautéed vegetables temporarily.
Step 3
Slice the Spam into bite-sized pieces (about 1cm thick). To reduce excess sodium and oil, briefly rinse the sliced Spam under hot water before cooking. This results in a cleaner taste. Sear the Spam slices in a dry pan (no oil added) until golden brown on both sides.
Step 4
Return the sautéed onions and mushrooms to the pan. Add all the sauce ingredients: 4 Tbsp water, 1/3 Tbsp ginger syrup, 1 Tbsp plum extract, and 1/2 Tbsp soy sauce. Bring the mixture to a boil over high heat until it bubbles vigorously.

Once the sauce is boiling, add the seared Spam slices. Continue to simmer for about 1-2 minutes, allowing the Spam to absorb the flavors of the sauce and vegetables. This step ensures a harmonious blend of the Spam’s saltiness, the vegetables’ sweetness, and the sauce’s savoriness.

Serve the delicious Spam rice bowl by placing a generous portion of warm rice in a bowl, and then topping it with the flavorful Spam and vegetable mixture. For an extra touch, you can sprinkle some crumbled seaweed or sesame seeds on top. Enjoy!
