Main Ingredients

  • A little bit of carrot
  • 1 onion
  • 2 Tbsp water
  • 2 shiitake mushrooms
  • 100g Spam
  • 1/5 green bell pepper
  • 2 Korean green chili peppers (kwari-gochu)
  • Cooking oil, as needed

Seasoning

  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce (or seasoned soy sauce)
  • Sesame seeds, as needed

Cooking Instructions

Step 1

First, thoroughly wash all your vegetables. Thinly slice the carrot. Slice the onion into strips. Remove the stems from the shiitake mushrooms and slice the caps thinly. (If using dried shiitake mushrooms, rehydrate them in warm water before slicing for enhanced flavor and texture). Remove the seeds from the green bell pepper and slice it into approximately 1cm thick pieces. Trim the stems from the Korean green chili peppers and cut them into 2-3 segments. Slice the Spam into thin, flat pieces, about 0.5cm thick.

Heat a generous amount of cooking oil in a pan over medium heat. Add the thinly sliced carrots and sliced onions. Stir-fry until the vegetables become slightly translucent and aromatic.

Once the initial vegetables are slightly softened, add the sliced shiitake mushrooms and continue to stir-fry. When the mushrooms begin to wilt, push all the ingredients to one side of the pan. Place the prepared Spam slices in the empty space and fry them until they are golden brown on both sides. The rendered fat from the Spam will add a wonderful flavor to the dish.

Now, add the sliced green bell pepper and Korean green chili peppers to the pan. Mix all the ingredients together and continue to stir-fry. If you’re concerned about the vegetables sticking or burning, you can add the 2 Tbsp of water at this stage to add moisture and ensure a tender result. Finally, add the 1 Tbsp of minced garlic and 1 Tbsp of soy sauce. Stir everything together well to ensure the seasonings are evenly distributed. Taste and adjust soy sauce if needed, according to your preference.

Once all the ingredients are cooked to perfection, turn off the heat. Sprinkle a good amount of sesame seeds over the stir-fry for an added nutty flavor.
