Main Ingredients- 2-3 fresh eggs
- 2 slices of Spam
Cooking Instructions
Step 1
First, crack 2-3 fresh eggs into a bowl. Use a fork or whisk to gently beat the yolks and whites together until smooth. Beating them thoroughly will ensure a fluffy and tender egg roll. Removing the chalazae (the stringy white bits) will result in an even softer texture.
Step 2
Next, heat a non-stick frying pan over medium-low heat and add a generous amount of cooking oil. Carefully pour in the beaten eggs, tilting the pan slightly so the egg mixture spreads thinly across the surface. As the egg begins to set, place the 2 slices of Spam side-by-side in the center of the pan. You can slice the Spam thinly or dice it into cubes, according to your preference.
Step 3
Once the bottom layer of egg is cooked and firm, gently lift the edge of the egg with chopsticks or a spoon. Carefully fold it over the Spam, encasing it. At this stage, gently pour any remaining uncooked egg mixture around the edges to connect the Spam and the cooked egg. Repeating this process will help create a thick and appealing Spam egg roll.
Step 4
When the egg is mostly cooked through, gently push the egg roll to one side of the pan. Using a spatula or spoon, fold the uncooked egg mixture underneath and continue to roll the egg roll tightly, tucking in the raw egg as you go. Keep rolling and cooking until all the egg mixture is cooked and the roll is firm and well-shaped. This will result in a golden-brown, delicious Spam egg roll! Let it cool slightly before slicing it into bite-sized pieces.
