- 2 Tbsp Sugar, adjust to 1 Tbsp if you prefer less sweetness

Cooking Instructions
Step 1
First, prepare one stalk of green onion. Wash it thoroughly, then slice it lengthwise in half. Finally, thinly slice it crosswise. Slicing it this way helps its aromatic flavor infuse better into the sauce, resulting in a more delicious stir-fry.
Step 2
In a bowl, combine the 250g of pork shoulder with 2 Tbsp of sugar. Gently mix and knead with your hands until well combined. The sugar helps to tenderize the meat and acts as a base for the marinade. If you prefer a less sweet taste, feel free to reduce the sugar to 1 Tbsp; it will still be delicious.
Step 3
To the sugared pork, add 3 Tbsp of soy sauce, 1 Tbsp of cooking wine, 1 Tbsp of minced garlic, and the pre-sliced green onions. Mix everything thoroughly with your hands, ensuring the marinade coats every piece of meat evenly. This step is crucial for allowing the flavors to penetrate the pork.
