Main Ingredients- 1kg Fresh Duck Breast/Thigh (sliced for bulgogi)
- 1/2 Onion (small size)
- 1 Mushroom (small size, e.g., King Oyster)
- 1-2 Green Onions (Scallions)
- A handful of Chives (for garnish, optional)
Marinade Ingredients- 4 Tbsp Soy Sauce
- 2 Tbsp Oyster Sauce
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Sugar
- 2 Tbsp Minced Garlic
- 1 Tbsp Ginger Syrup (or 1/2 tsp minced fresh ginger)
- 1 Tbsp Sesame Oil
- 10 twists of Black Pepper
- 4 Tbsp Soy Sauce
- 2 Tbsp Oyster Sauce
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Sugar
- 2 Tbsp Minced Garlic
- 1 Tbsp Ginger Syrup (or 1/2 tsp minced fresh ginger)
- 1 Tbsp Sesame Oil
- 10 twists of Black Pepper
Cooking Instructions
Step 1
Start with 1kg of fresh duck, preferably pre-sliced for bulgogi. If your duck comes vacuum-sealed, you might notice some residual blood. Gently pat it dry with paper towels to ensure a cleaner taste and appearance.
Step 2
Prepare the flavorful marinade. In a large bowl, combine 4 Tbsp soy sauce, 2 Tbsp oyster sauce, 2 Tbsp mirin, 2 Tbsp sugar, 2 Tbsp minced garlic, 1 Tbsp ginger syrup, and about 10 twists of black pepper. Stir well until the sugar is completely dissolved.
Step 3
Add the patted-dry duck slices to the marinade bowl. Use your hands to gently mix, ensuring every piece of duck is coated evenly with the marinade. Let it marinate for at least 10 minutes for the flavors to meld beautifully.
Step 4
While the duck is marinating, prepare the vegetables. Thinly slice 1/2 small onion. Slice 1 mushroom (like King Oyster) into similar-sized strips. Cut 1-2 green onions into large chunks, about 3-4 cm long.
Step 5
Heat a pan over medium heat. Add the marinated duck slices and begin to stir-fry. Cook until the duck’s surface turns opaque. Stir occasionally to prevent sticking.
Step 6
Once the duck is about 70% cooked, add the sliced onions and mushrooms to the pan. Continue stir-frying. Duck can release quite a bit of fat; if you notice excessive oil, you can carefully pour some of it out. Cook until the vegetables soften and the duck is nicely browned.
Step 7
When the onions are tender, add the chopped green onions and stir-fry for another minute. Finally, drizzle in 1 Tbsp of sesame oil and stir to combine before turning off the heat. Transfer the delicious duck bulgogi to a serving plate. If you have chives, finely chop them and sprinkle over the top for a fresh garnish. Enjoy your homemade duck bulgogi!
