Easy and Delicious Soft-Boiled Egg Jangjorim Recipe
Perfect as a side dish! Make these flavorful, chewy soft-boiled eggs in soy sauce quickly and easily. They are incredibly appetizing and pair perfectly with rice.
Main Ingredients- 15 Soft-boiled eggs
- 1/2 handful dried shiitake or pine mushrooms (approx. 15g)
- 5 cloves Garlic
Braising Sauce- 3 Tbsp Soy sauce
- 3 Tbsp Water
- 1 Tbsp Ginger syrup (or honey/corn syrup)
- 1 Tbsp Mirin or cooking sake
- 1 Tbsp Corn syrup or honey (instead of plum extract)

Cooking Instructions
Step 1
Using pre-peeled, store-bought soft-boiled eggs will significantly shorten your cooking time. If your eggs are not peeled, boil them in water with a little vinegar and salt, then rinse in cold water and carefully peel. For better flavor absorption, you can lightly score the peeled eggs with a knife.
Step 2
Rinse the dried mushrooms under cold running water and pat them dry. Peel the garlic cloves. Place the prepared mushrooms and garlic into a pot or deep pan.
Step 3
Combine all the braising sauce ingredients: soy sauce, water, ginger syrup (or sweetener), mirin (or sake), and corn syrup (or honey) in the pot. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and let it simmer to allow the flavors to meld.
Step 4
Once the sauce is simmering, carefully add the prepared soft-boiled eggs to the pot. Ensure the eggs are submerged in the sauce.
Step 5
Cover the pot with a lid that fits snugly or use plastic wrap to create a seal. This steaming effect will help the sauce rise and coat the eggs evenly without needing to ladle it over them. Braise gently over medium-low heat for about 10-15 minutes. Flip the eggs once or twice during cooking for even coloring.
Step 6
Turn off the heat when the sauce has reduced to a syrupy consistency and the eggs have a glossy finish. Let the braised eggs cool slightly before serving; the flavors will deepen as they sit. These are perfect as a staple side dish or for packing in lunchboxes!
